Formula: 140g brown rice, 90g sorghum, 170g tapioca, 18g powder, 12g sugar, 8g salt, 90g starter, 300g milk, 40g oil, optional egg. Six to eight buns. Toast the cut face on the grill—the Maillard layer is waterproofing. Cool 30 minutes; buns set faster than loaves but still split cleaner when not steaming hot.

Gluten-free enriched dough proofs until puffy and jiggly, not until doubled. Overproofing collapses the gel. Bake when a wet fingertip springs back slowly.

Use a lighter psyllium dose (about 4% of flour) and do not add extra xanthan. Two full gums stacked make a bouncy, gummy crumb.

Can I use discard instead of active starter?
